rhubarb hospitality recruitment is searching for a regional catering services manager for uk prison services, the charitable trust that manages prison visitor catering services in 20+ prisons across the uk. this regional catering services manager role will be responsible for overseeing sites across the south, south east and south west of england, and will be working with the national head of refreshment services, to support local site catering managers, ensuring proper day-to-day site operations and proper visitor refreshment service integration within the local hmpps prison services setting.

visitor catering services deliver refreshment facilities within the prison visitor halls, offering hot and cold drinks, sandwiches, paninis, and other simply pre-prepared cafeteria offerings. all menu items are prepared offsite and there is no on-site food production.

ideal candidates will have previous experience within a hospitality catering, food-led setting, perhaps as a catering manager, catering services manager, food & beverage manager, hotel operations manager, or other food f&b-focused operational role. it is essential that candidates hold an l2 food hygiene qualification or above, and must be able to demonstrate an aptitude for all areas of catering management including managing health, safety and hygiene inspections, budgets, financial management, stock management, facilities management, team management etc.

this is a home-based role that involves extensive travel across the south, south east and south west of england, you will be expected to travel at least 3 days per week visiting the prison sites across these territories. you will be expected to have a full uk driving licence and your own car; an allowance of 45 pence per mile is paid towards fuel and vehicle maintenance. the postholder will be based anywhere in the south of the country to support effective coverage of all sites.

job description

the regional catering services manager will:

support the development, delivery and roll-out of prison-based refreshment offers (e.g., cafes and tea bars) within prison visits halls.
be the point of contact in relation to ensuring adherence to legislative requirements in particular environmental health registration and adherence to the relevant food hygiene and allergens legislation in agreed prisons.
maintain and update refreshment services operating manual for prisons, and ensure that effective quality assurance mechanisms are in place across all sites in prison-based refreshment facilities so that they are clean, safe, family-focused, friendly, and aligned with local secure, operating, logistics, and contractual requirements
maintain: compliance always with relevant existing food hygiene, allergen, and pest control legislation as well as with local council environmental health regulations. inspection-readiness in relation to food, hygiene, and environmental health inspections. systems are in place with hmpps suppliers to manage product recalls. alignment with diverse cultural, religious, and other dietary requirements. good standards in relation to taste, health, and nutrition. the effective development and implementation of service improvement plans. work with prisons to establish and maintain an effective audit cycle for all sites to support quality assurance and ensure timely and effective management in relation to (but not limited to the following: annual service audits, mobilisation plans, assets registers, risk assessments and associated risk management plans, issues logs, pat testing, support the head of refreshment services (prison visits), in collaboration with relevant local staff and hmpps supply chain leads, to ensure appropriate stock requirements, product lines and price points, and provide up-to-date purchasing/recall guidance to staff across all sites.

salary

£34,000 to £38,000 dependent on experience.
