the position chef de partie has become available due to increased business
situated in the rural midlothian town of lasswade, this award winning inn with rooms has been an ever popular & well regarded presence in the community.
the kitchen is tight but very functional with an external walk in fridge & separate prep areas.
the main duties of the role are
ensuring the smooth operation of a section within the kitchen
working under the head chef to follow kitchen food prep specs & recipes
training & development junior members of the brigade
assisting the head chef in maintaining low wastage
assisting with preparation and rotation of foods in a safe manner
working within and maintaining of our cook-safe food safety system
documentation & safe preparation of allergens within the kitchen
experience of at least 1 years in a similar standard of bistro/brasserie/ gastropub would be desireable for this role and we aren't adverse to giving a commited and hard working employee development plans and future promotions if their drive & hard work warrant it,

running of a section in a busy fast paced kitchen
all necessary knowledge in food preparation and cookery to prepare & execute scottish pub & comfort foods
