chef de partie's required for new opening, pencaitland, east lothian

the position of chef de partie will soon be available for an excellent new venue in east lothian.

situated in the east lothian town of pencaitland, this new opening is between south east edinburgh & haddington and is an area which is proving to be one of the most desireable in scotland to live in.

the kitchen is custom built to ensure the working environment is as efficient, enjoyable & comfortable as it can be with 2 rational ovens, thermomix, solid top & 6 burner stoves as well as a fantastic walk in fridge and separate preparation areas.

the main duties of the role are

ensuring the smooth operation of a section within the kitchen and preparation within the kitchen working under the instruction of the head chef & sous chef
working within the kitchen brigade to follow & maintain spec of dishes & preparation in line with head chef's guidelines
training & development junior members of the brigade
assisting the head chef & sous in maintaining low wastage
maintenance of a cook-safe food safety system
documentation & safe preparation of allergens within the kitchen

experience of at least 1 years as a chef de partie in a similar standard of bistro/brasserie/ gastropub would be desireable for this role and we aren't adverse to giving a commited and hard working employee the opportunity to run their own kitchen for the first time if their experience and desire match up to them being a great appointment.
