launching a new tap room & kitchen on a busy parade in south london in october this craft beer micro-brewery is looking for a strong head chef to lead the kitchen team and play a key role in the growth of the business. open mainly evenings, but with an all-day weekend brunch menu, the kitchen will serve a mix of tap room classics, a full vegan menu and tapas style small dishes and sharing plates. working from a modern and well-equipped kitchen you will run a small team cooking real food but with fast food efficiency. the restaurant seats up to 90 covers and will be very busy at peak times so excellent cook to order experience is essential.
as head chef you will be responsible for all aspects of the day to day running of your kitchen including:
all food production, stock management & wastage
menu development & quality assurance
compliance with all statutory regulations and legislation
staff training & retention
food safety & hygiene
the kitchen budget and gp
the ideal candidate will be a solid all-round professional chef capable of operating as part of the management team, flexible, even tempered, and customer focused.
the company is heavily invested in conservation and the environment, and a percentage of every sale goes directly to their nominated charity partners helping support wildlife conservation and endangered species across the globe.
45-hour week . closed sunday night and monday
salary: £40,000 inclusive of service charge + bonus
other staff also required both kitchen and f.o.h
