front of house/waiting staff: £23,000 - £25,000 base salary plus tronc earnings of approximately £7,500 p/a. (£30,500 - £32,500 ote)

we are looking for a dedicated and enthusiastic front of house team member to join our team full-time, with immediate starts available for the right person.

we have positions as waiter, bar person and sommelier.

heron opened in july 2021 as a relaxed but professional fine dining restaurant in the heart of leith, recently named by time out as the fourth coolest neighbourhood in the world. we run a small a la carte and a tasting menu using the best seasonal produce from our extensive list of local suppliers and artisans.

front of house position:

we serve a la carte and tasting menus in the restaurant in an informal yet informed style with an emphasis on knowledge, passion and a desire to give guests a great experience.

bar person position:

we have a well-made (no shortcuts) classic cocktail list using top-quality spirits, vermouths and seasonal ingredients. we aim to serve cocktails and drinks which entice and excite with a strong emphasis on booze-forward drinks. we would be looking for someone to bring some of their own personality and drive to push the beverage program further, alongside our bar manager.

sommelier

heron has a big focus on wine with two leading sommeliers (ex number 1 at the balmoral, dinner by heston blumenthal, the clove club) creating a great wine list emphasising both well-known and hidden wines of the old world, with over 120 references currently and an aim to grow to over 400 references over the next year. we would be looking for someone who is wanting to develop their knowledge and sommelier skills in a professional high-quality environment.
