in late summer 2022, we are opening our much anticipated "house on the beach" at 73 market street in the heart of venice beach. once the creative home to some of the most influential creative luminaries in art and entertainment including hal ashby, oliver stone, and david hockney, neuehouse venice beach is a new work, social, and cultural hub for the venice creative community, with an exquisite rooftop restaurant, light-filled bar, and expanded amenities for the venice set.

the role 
 

the reunion executive sous chef assists in driving culinary excellence across the entirety of the business by focusing on the jewel box property. the executive sous chef helps define and execute the high standards set for the reunion restaurant launch, recruits and develops the culinary team, and drives a high-quality seasonal, sustainable, innovative, and wellness-focused menu. directly reporting to the reunion executive chef and reunion general manager, the role will oversee all culinary teams on-premise. the executive sous chef leads and represents the culinary program and is responsible for the overall success of the day-to-day operations of all neuehouse teams and kitchens. 

strong candidates should have a background in culinary leadership and execution in high-volume and concept-forward kitchens. a strong emphasis is placed on candidates' ability to train and motivate teams to take pride in products and excel beyond standards and expectations. 

requirements:

6+ years of experience in a similar role, leading concept-driven kitchens.  drive internal teams to meticulously manage the physical appearance and behind-the-scenes operations of a first-class cultural institution.  training, development, and mentorship of in-house teams to ensure the maintenance of recipes, portion specifications, and standard preparation procedures for all dishes and ensure that all culinary team members are following these standards. 

menu & concept: 

in the absence of the executive chef on premise, the executive sous chef leads and represents the culinary teams and program and is responsible for the overall success of the day-to-day operations of all neuehouse venice beach kitchens.  assists the executive chef in menu development; considers the availability of raw food and ingredients, availability of skill required in preparing new menus, always upholding the high standards set for the reunion culinary program.  preparation and execution of a seasonal menu concept and bespoke menu concepts for optional private and member and guest events.  ensure kitchen operations can run smoothly and efficiently with a mind toward member and guest, as well as employee experience. 

financial management: 

under the guidance of the executive chef; oversee vendor management & negotiation, company invoice tracking, food cost management, labor cost management and inventory control.  analyzes weekly/daily menu item analysis to understand sales, with member and guest preferences in mind.  determination of purchasing specifications and budgetary allotments for all menu items.  ensure all expense control/forecasting systems are in place with close monitoring of all department expenses including revenue to payroll ratio.  read, plan and communicate culinary elements of all reunion kitchens p&l statements. 

health, safety & team management: 

maintain complete knowledge of and compliance with all health & safety, company employment policies/service procedures/standards as these relate to the kitchen and culinary team.  implement all doh requirements and haccp safety program across all kitchens.  under the guidance of the executive chef; coordinate hiring and training activities for the kitchen and other production and all back of house employees while continuously mentoring and monitoring their performance.  is present in the kitchen with the team during prime service periods and is working in the kitchen/prep for a majority of their scheduled time.  provides the executive chef and reunion general manager schedule advice on a weekly basis for culinary teams.  leadership and development of talent on our kitchen teams.  guide, develop, and implement operational excellence decisions that become scalable sops for property development, new concept development, and/or f&b changes within the property. be prepared to outline policies, procedures, and systems to improve our business, service, retention, and magic of the neuehouse experience.
