summary of the role we are looking for an experienced pastry chef to prepare a variety of desserts, cakes, mousse’s, cookies, pastries and/other sweet goods. your skill in baking high quality treats should be matched by your creativity to develop new amazing tastes and recipes. the post holder will be managing production and finishing of the pastry section and will be responsible for controlling and directing the food preparation process, producing all debaere products under strict guidelines and agreed quality specifications, supervising quality compliance of all production lines.

the ideal candidate will be well-versed in culinary arts with a passion for sweet and delicious creations. they must adhere to health and safety standards to provide clients with the best possible serving.

the post holder also needs to have knowledge of food safety protocol in particular working with brc and/or salsa standards.

the goal is to enhance customer satisfaction so that we can maintain and expand our clientele.

this role is full time and requires working in the afternoon from 2pm to 10pm.

main duties & responsibilities

prepare a wide variety of goods such as cakes, cookies, pies, bread etc., following traditional and modern recipes production of all products under own duty, ensuring they are made under strict guidelines and achieve the agreed quality specifications deputise the deputy chef/head chef as and when required create new and exciting desserts to renew our menus and engage the interest of customers decorate pastries using different icings, toppings etc., to ensure the presentation looks beautiful and exciting follow daily planning of preparing products such as baked sponges, raw dough for cookies, doughs, cakes and mousse’s monitor stocks for baking ingredients such as flour, sugar etc., and make appropriate orders within budget and following the fifo procedure check quality of material and condition of equipment and devices used for cooking guide and motivate pastry assistants and bakers to work more efficiently maintain a lean and orderly cooking station and adhere to health and safety standards managing systems (prod track) to ensure all records are kept and maintained monitor baking process and discharging baked products from ovens and passing to kitchen assistants to ensure products are removed from moulds, finishing products to desired requirements

requirements & skills

proven experience as pastry chef, baker or relevant role working in a commercial/bakery environment educated to a degree level in food science, food related subject - desirable have a haccp qualification and/or food safety certification good understanding of relevant uk food legislation, guidelines and codes of practice great attention to detail and creativity organizing and leadership skills willingness to replenish professional knowledge in depth knowledge of sanitation principles, food preparation and baking techniques and nutrition knowledge of ingredients, nutrition and factory process methods and a working knowledge of continuous improvements principles. ability to train and teach other staff good communication, organisational, planning and teamwork skills working knowledge of baking with ingredient limitations (pastries that are gluten free, sugarless etc.) certificate in culinary arts, pastry-making, baking or relevant field.
